Baked potato boats

Ingredients

These tasty baked potatoes are easy to make and good for you too.

You will need:

  • 3 medium size potatoes or sweet potatoes

More ingredients will be needed depending on which baked potato boat you would like to make.

Equipment

  • chopping board
  • knife
  • baking tray
  • oven gloves
  • two small mixing bowls
  • wooden spoon
  • small saucepan
  • tablespoon
  • teaspoon
  • three plates

Preheat the oven to 200°C / 390°F / Gas Mark 6

Step 1

Start by scoring the potatoes with a knife (be careful with the sharp knife).

Put them on a baking tray and ask an adult to put them in the oven.

Cook the potatoes for 45-60 minutes, until soft.

Step 2

Ask an adult to take the potatoes out of the oven and leave them to cool down.

Put them on a chopping board and cut them open along the scored lines with a knife.

Push up the flesh with your fingers and fill it with one of our three tasty toppings.

Tuna and sweetcorn

Ingredients:

  • 100g tuna, canned in water
  • 2 tablespoons plain low-fat yoghurt
  • 3 tablespoons cooked fresh sweetcorn, canned or frozen
  • 2 spring onions, finely chopped

What to do:

In a mixing bowl mix together the tuna, yoghurt, sweetcorn and spring onions.

Then spoon your topping onto your potato. 

Spicy beans

Ingredients:

  • 1 can kidney beans in water, drained
  • 2 tomatoes, chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon mild paprika
  • 1 tablespoon low-fat yoghurt

What to do:

Ask an adult to help you heat the beans and tomatoes in a saucepan for five minutes.

Stir in the cumin, paprika and yoghurt. Then spoon your topping onto your potato.

Cheese and chives

Ingredients:

  • small bunch of chives, finely chopped
  • half an avocado
  • 100g low-fat cream cheese

What to do:

In a mixing bowl mix together the cheese, chives and avocado.

Then spoon your topping onto your potato.
